At L’Oliveto, olive oil is more than an ingredient — it’s the purest expression of the land itself. It carries the story of our century-old trees, the Tuscan sun, and the care with which our olives are grown, picked, and pressed.
Our oil reflects the balance that guides everything we do here: respect for nature, a deep connection to earth, and the joy of sharing something truly authentic.


The Craft - From tree to table
Our oil is certified organic and extra virgin, produced from a blend of traditional olive varieties — Leccino, Moraiolo, Frantoio, and Maurino. The estate is home to around 200 century-old trees, alongside 280 newly planted olives of the same varieties. Together, they create a balanced grove that reflects both heritage and renewal, ensuring a rich, authentic flavor and healthy biodiversity.
Each autumn, the olives are handpicked by us and cold-pressed early in the season, around mid-October. This early harvest reduces the yield but enhances the quality, resulting in an oil that is low in acidity, rich in antioxidants, and full of vitality. With its bright golden-green color, it offers fresh notes of grass, artichoke, and almond, and a pleasantly spicy finish.
